Bertazzoni built-in electric ovens have programmable micro-processor controlled cooking modes. The settings memory lets you manage and build up your own bank of cooking methods. Functions include non-convection baking, convection, combined convection and grilling, and low-temperature proofing and warming modes. The infrared grill gives powerful searing and grilling over a large surface area. It is designed with seven numbered shelf positions.
To maximise the space available the bottom shelf is designed with a lowered rack. The oven space has been designed to take industry-standard sized catering accessories, containers and dishes. Oven doors have quadruple-glass insulation. New, advanced materials are used to insulate the oven cavity and improve energy efficiency . The high-quality door frames are in stainless steel.
Heat is provided by four elements – two circular, one top and one bottom. Cooking temperatures are constantly monitored and managed between 40°C (105°F) and 260°C (500°F). The self-clean function operates at 430°C (800°F).
The ovens have a two-fan heating convection system. They are positioned on the diagonal to allows them to be larger and thus to impel a greater volume of air with less turbulence. A baffle provides a separation where turbulence could occur, improving the direction of the airflow.
Bertazzoni fan-assisted convection technology brings extra versatility and precision to cooking.
Subsidiary vents at the top and bottom of the oven provide additional air flows to the cavity extremities that would not otherwise be well reached by the heat.
This fan system allows you to reduce the heating temperature, saving on electricity . Food stays moister and healthier, and grease particles do not carbonize. When using the oven for more than one dish, the different levels cook much more evenly than in a traditional convection oven. For traditional cooking, such as baking and recipes that require conventional heat, the ovens operate without the convection fans.
All Design Series and Professional Series built-in ovens feature LCD touch control user interfaces with four interactive ‘smart button’ touch areas located on each side of the LCD display. Direct electronic control and immediate feedback of the oven functions gives you much greater precision and flexibility than manual controls. It saves energy, reduces loss of weight during cooking, and retains the nutrients in foods better. The result: healthier cooking for better food.
XT models feature the highly flexible and cook-friendly Bertazzoni Assistant, which turns the oven into the perfect partner to your cooking skills. It features a finely tuned bank of cooking sequences based on 8 food categories allowing for personalized ‘adjust for taste’ setting. This has been designed so that the cook remains in control. There are no pre-loaded recipes or restrictions on styles of cooking.

BERTAZZONI ASSISTANT FUNCTIONS
To use the Assistant, you decide on the main ingredient and the size/weight. You also select the type of cooking, including slow cooking, and the desired finish. At this point the Assistant takes over responsibility and sets the temperatures and oven function.
Once the cooking of the particular dish has been completed, you can save it to the oven’s memory for future automatic use.
The retrieve function allows you to repeat automatically the cooking method of any dish you have previously saved.
The micro-processor auto-settings were created by renowned Italian chef consultant Roberto Carcangiu. The interface is intuitive and very simple to use. Alternatively, the oven can be operated entirely manually if desired.
Different size gas burners give cooking the versatility and accuracy you need. Bertazzoni’s exclusive dual burners in brass provide high-efficiency, from a delicate low simmer to full power (6,200 –18,000 BTU). Burners deliver best-in-class heat-up times.
The gas hobs design gives a very clean combustion with low carbon monoxide emissions. Pots are placed closer to the flame, reaching boiling point more quickly and reducing gas consumption during cooking . The one-touch, child safety ignition system lets you light and adjust burners with one hand. The safety system automatically stops the gas flow if the flame goes out, even when electrical power is cut.
Bertazzoni’s one-piece worktop molding is best-in-class. With sealed burners, no sharp angles or dirt traps, cleaning is fast and easy. Heavy-duty cast iron grates allow easy movement of any kind of pot. Accessories include stainless-steel teppan-yaki griddle plates, and wok and simmer ring adapters in cast iron.
The coil produces a high-frequency electromagnetic field which penetrates the iron or steel pan and generates heat. Heat generation stops as soon as the pan is removed from the element, or it is switched off.
Bertazzoni induction cooktops have output levels of 9300 watts for fast, efficient boiling and cooking. The variable low-to-high power is controlled electronically.
The ceramic tops have five flexible cooking zones, with the largest two at the back. This arrangement accommodates full-size cookware and makes it easy to prepare a wide range of different dishes very quickly with minimal energy output.
Special functions include a booster function and a pot detection system. Residual heat indicators warn if the hob is hot, even when the zone is switched off.
The hobs are very easy to clean, with wear-resistant glass ceramic top and no knobs. Induction cooktops can only be used with ferrous metal cookware such as stainless steel, cast-iron, and enamelled steel. Please note that aluminium, copper, and Pyrex cookware will not work on an induction cooker.Burners & cooktops

The ovens have a large capacity and five rack positions. Multi-level cooking allows several dishes to be cooked at the same time.
Two internal lights give ample illumination at each of the levels.
Electric ignition operates both oven and grill.

In gas mode, the oven is ideal for fish and roasting meat. Gas reaches a high temperature in a short time which helps to seal the food and keep it juicy inside while making the outside crispy.
The heat and natural humidity produced by gas combustion are evenly distributed by the fan.
In electric mode, the oven is ideal for mid- to low-temperature cooking such as baking or recipes that require slow cooking such as casseroles. Electric allows a very precise control of temperature and even heat distribution, assisted by the fan.
The circular electric element provides a dry and uniform type of heat, easy to control at low temperature. The oven also has an electric grill and you can set it combined convection and grilling, low-temperature proving and warming.Safety & recycling
